Above is a dark chocolate ganache thumbprint cookie that totally <i>hit the spot<\/i> when I was craving some chocolatey cookie goodness. For Christmas, however, I usually make them with raspberry jam. There&#8217;s something especially delicious about raspberry and almond together. <\/p>\n<blockquote><p><b>Ingredients:<\/b><br \/>\n1 cup of butter (2 sticks, softened)<br \/>\n2\/3 cup of sugar<br \/>\n1\/2 teaspoon almond extract<br \/>\n2 cups of flour<\/p>\n<p>filling of your choice (raspberry jam is good, as is <a href=\"http:\/\/allrecipes.com\/recipe\/chocolate-ganache\/\">chocolate ganache<\/a>)\n<\/p><\/blockquote>\n<p>Pre-heat your oven to 350F and line a cookie sheet with parchment paper.<\/p>\n<p><center><a href=\"http:\/\/www.flickr.com\/photos\/yarnattacks\/6538844297\/\" title=\"tpc-steps by yarnattacks, on Flickr\"><img decoding=\"async\" loading=\"lazy\" src=\"http:\/\/farm8.staticflickr.com\/7008\/6538844297_8f984902b0.jpg\" width=\"500\" height=\"500\" alt=\"tpc-steps\" style=\"border:0px !important;\"><\/a><\/a><\/center><\/p>\n<p>one: cream the butter &#038; sugar together.<br \/>\ntwo: add in the almond extract.<br \/>\nthree: add in the flour.<br \/>\nfour: mix until it comes together into a dough.<\/p>\n<p><center><a href=\"http:\/\/www.flickr.com\/photos\/yarnattacks\/6538794831\/\" title=\"tpc7 by yarnattacks, on Flickr\"><img decoding=\"async\" loading=\"lazy\" src=\"http:\/\/farm8.staticflickr.com\/7142\/6538794831_62ef2efb3d.jpg\" width=\"500\" height=\"333\" alt=\"thumbprintcookies\" ><\/a><\/center><br \/>\nUse a cookie scoop for consistent cookie sizes. Drop a scoopful on your lined cookie sheet. Using your thumb, make a small indentation in the center for your filling. Fill with a small amount of jam or chocolate.<\/p>\n<p>Bake for 15 minutes or until the edges turn a light golden brown.
